About BBQ Calculators

BBQ Calculators is a small, independent site with one job: turn the smoking-time rules of thumb that live in pitmasters' heads into schedules you can plan a dinner around, with the sources printed next to the answer.

Who runs this

The site is built and maintained by Nick, owner of Rolling Oven, a wood-fired pizza and taproom business with multiple locations in the Lexington, Kentucky area. He manages fire for a living and has cooked more briskets that finished at the wrong time than he'd like to admit. The calculators here are the planning math he uses, written down. If a number looks off or there's a tool you wish existed, say so.

Where the numbers come from

Time and temperature rules are compiled from the published guides of the people who have tested them most: AmazingRibs (Meathead Goldwyn), ThermoWorks, Hey Grill Hey, Traeger, Weber, Virtual Weber Bullet, Malcom Reed's HowToBBQRight, Smoked BBQ Source, Kamado Joe, Meat Church and Destination BBQ. Safety rules (safe minimum temperatures, the smoked-turkey size limit, thawing times) come from USDA FSIS. Serving-size and yield figures come from catering references. Where sources disagree, the calculators use the range and say so. Every page lists its sources at the bottom.

How the estimates work

Collagen cuts (brisket, pork butt, beef ribs) use hours per pound at your smoker temperature, interpolated between the published points, with a capped credit for wrapping. Thickness-driven cuts (ribs, chicken, tri-tip, salmon) use a fixed range at each temperature. Schedules work backward from your serving time using the high end of the estimate plus the full rest plus a cushion, because finished meat holds and unfinished meat doesn't. Your inputs stay in your browser. The results are planning estimates; the thermometer decides when the meat is done.

Independence and how the site makes money

We are not affiliated with any grill, smoker, pellet, charcoal or thermometer company. The site shows ads and includes affiliate links to gear we'd recommend anyway (as an Amazon Associate, we earn from qualifying purchases); that never changes the math. If you give us your email to unlock a result, we use it to send a one-page smoking chart and occasional new-tool notes, and you can unsubscribe with one click. We never sell it.
